Working stickbaits

Hey guys,

I am heading to Port Stephens in January to do a bit of game/sport fishing to get my warmed up for Shoalwater in Feb.

I have bought some stickbaits (the nomad, or blackjack, or whatever name you want to call them) Dogtooth and Uluas, to troll for whatever we can find, along with some skirted lures. I bought some big ones for that purpose, and some medium and smaller ones for trolling/casting.

I was thinking if we come across any schools of dolphin fish or tuna up near the surface I would love to try and catch some on the stickbaits...however, I have never cast and worked one before.

Any tips would be really appreciated. Also, I have a couple of popping rods, but they seem a bit of overkill for small to medium sized tuna and dollies. Would it be viable to work the smaller, maybe medium sized, stickbaits with a 7' 8-12kg spinning rod?
