I use roll up bags and store them unrigged.
Like Mark, I remove the hooks and split rings and store them separately in airtight containers. I make sure that before I get on the boat I have a selection of hooks sizes and types pre-rigged with split rings so that all I have to do on the water is connect the split rings to the lure. If I want to change lures quickly I just put hook covers on and put the lure still rigged in my bag where I'll take the hooks off when I have more time.
