Rigging poppers

I've been considering rigging my poppers with a single treble. My rationale is the extra hook poses a threat to injury when landing the fish or removing the hook. Being some distance from medical attention, this may be prudent. Although, GTs seem fairly docile once subdued. Any ideas as to whether this is being overly cautious? It seems that when a fish is committed, it is committed! Thoughts?

If you want to use just a single hook, I suggest you consider an assist off the towing point

Thanks Brandon. Can I ask why? Do they seem to target the heads of baitfish or maybe it's a more direct connection to the leader?

yes, GTs tend to target the head of the baitfish. You also mentioned safety was a big factor and a single hook is about as safe as it gets.
