These are fantastic... as are the Simms ones..
I must say I am not a fan of the fold top bags... they are pretty useless in my opinion if you need to get things in and out of a bag regularly because of the access area only being from the top... I've had a few, and they have all been banished to the back of the man cave in frustration as I find it too frustrating to try get shit in and out of them...
The waterproof zip options are where its at for me...
40L is a pretty big pack though Luke, not sure if you'll find a zip option...

Are the zips completely 100% waterproof? I just can't get my head around a zipper being waterproof :)

Looks to be a stack of good stuff on there! Definitely looks to be the direction I might head in pending verdicts on rolls & zips.
