I currently have a DJ83MH and love it for smaller chuggers to 130g and stickbaits and love it to death. What can you recommend as a dedicated rod for 120g to 210g poppers?

Ben, I'll respond to this question. If you're looking for a rod for 210g chuggers, I'd suggest that the rod wouldn't really be ideal for 120g chuggers. I'd stick with your DJ for the 120g chuggers but for the big lures say from about 180g upwards, I'd look for a different rod. At this point, the strongest of the new generation of popper rods from Carpenter is the MH79XH but for poppers beyond about 180g, well, if you want a Carpenter, you really will need to find a second hand SP78UHL.

I was really after something mainly for 140g to 180g but would still work poppers up to the 210g mark as a maximum.
Anything from Carpenter in the 7'10" - 8'4" range?

The 79XH will be perfect for poppers in that range. If you need to work something bigger, popping from the gimbal will enable you to work the bigger popper.
I've popped King Kongs with that rod from the gimbal. It saturates a bit too much but from the gimbal, you can still get a very big chug notwithstanding
if you're looking for a rod to specifically pop 200g+ poppers, I'd suggest you look at something like a Carpenter SP78UHL (will be used), Fisherman R10 77L, a Ripple 78XH or a Patriot like a Black Mafia. I'm too scared of a Fire Vortex to even consider recommending it!

The 79XH from everything that we have been told will be comfortable with lures pushing 200g.
If you want something to throw and pop the biggest of lures then you start looking into rods like
Patriot Black Mafia

Sevenseas Big Pop Powerful (one of the nicest tapers going around in my opinion)

I second Toms recommendation for the Sevenseas Big Pop Powerful. Nearly as stiff as the SP78UHL but more forgiving to work with, used mine on I cups without issues.
